health journey and New Year's goals

Tonight (January 4, 2023) as I was sitting in between people who were eating things that aren't for me, I had this thought: "Being overweight is hard. Resisting temptation is hard. Choose your hard." Just thinking that really helped me--I was choosing the hard of not eating things that weren't for my good health over the hard of continuing to be less healthy/overweight, and it actually made it feel not hard! So I thought I'd share my experience. It's based on a great little quote:

Obesity is hard. Being fit is hard. Choose your hard.

Being in debt is hard. Being financially disciplined is hard. Choose your hard.

Another insight that I had that was helpful to me:

Today (January 30, 2023) while I was thinking about the challenge of being restricted in what I eat, I remembered that at church yesterday our speaker said that all commandments and standards given to us bless us when they are put into practice. He also said that commandments free us from the bondage of sin and give us more freedom. I sat there in the congregation thinking that I wholeheartedly agreed. Commandments are such a great blessing and not restricting but freeing.

So today the thought came to me that I have "food commandments" that if I follow will be a blessing to me, give me more freedom, and free me from the bondage of food addiction and many health problems. I hope to keep this thought in my mind to help me realize the lines aren't restrictive but freeing.

If we see healthy eating and exercise as something only our doctor expects of us, we will likely fail. If we see these choices as who we are and who we want to become, we have a greater chance of staying the course and succeeding....

When our attention is mainly focused on our daily successes or failures, we may lose our way, wander, and fall. Keeping our sights on higher goals will help us become better sons and brothers, kinder fathers, and more loving husbands....

My dear friends and brethren, no matter how many times you have slipped or fallen, rise up! Your destiny is a glorious one! Stand tall and walk in the light of the restored gospel of Jesus Christ! You are stronger than you realize. You are more capable than you can imagine. You can do it now!

My high weight for 2022 was 182.5 (and for my life was 195 which I've reached several times). I weighed 182.5 on May 27. I lost almost 40 pounds by the end of the year. YouTube videos from Dr. Sten Ekberg and a few others have been a huge help in my journey.

My current Eating Plan is a mixture of The Daniel Plan (my newest find that I'm still figuring out), Bright Line Eating (BLE), and Low Carb Higher Fat (LCHF) eating, Intermittent Fasting, with usually 2 meals a day in the time frame of about 6 hours (e.g. 9 am to 3 pm, or 11 am to 5pm) and an avocado for "dinner." 

A typical breakfast being 6 oz of fruit (usually berries), a handful of chopped pecans, 2 eggs, butter or coconut oil, sautĆ©ed vegetables (mushrooms, green onions, red bell pepper).

"Linner" is about 1.5 oz of spring mix greens, chopped red bell pepper, English cucumber, cilantro, drizzled with EVOO and a bit of salad dressing, and maybe some avocado, hard boiled egg, cooked chicken. Sometimes if I feel the need for something a little later, I eat 1/2 to 1 avocado.

Exercise Plan is a water exercising classes 2-3 mornings a week with a hand weight routine that is done 2-3 non-pool mornings/week. When the weather gets nicer, it will probably include riding bikes again.


Language Study Plan is still being worked on. I do Duolingo everyday but I need to get back on a daily Mandarin Blueprint study plan.

Piano is basic for now. Practice at least one hymn daily.

Morning scripture study includes a chapter in the Book of Mormon, one General Conference talk, and the Come, Follow Me New Testament assignment for the week (which I have made a reading schedule for). I have a notebook for writing my thoughts from the New Testament lessons.

I also have the goal to edit and add to my previous posts on Turning Our Hearts, my family history blog. When the editing is done, I'd like to print what I have posted.

And majorly, I need to do a better job in ministering. And in keeping in touch with my family.

Creamy Cajun Chicken from Ketones with Kate


YUM!!! šŸ™ŒšŸ» 8 servings, 8 carbs eachšŸ‘šŸ»

1 1/2 lbs chicken breast
1 Tbsp butter or olive oil
1 Tbsp garlic (used jar)
1 cup onion, chopped
1 cup carrots, chopped (**didn’t use)
1 1/2 cup celery, chopped
1 1/2 cup bell pepper, chopped (any color or a mix)
2 Tbsp Old Bay or Cajun seasoning
2 tsp hot sauce
1 (14 oz) can fire roasted tomatoes, drained
3 cups chicken broth
1/4 cup HWC (heavy whipping cream šŸ˜‰)
8 oz cream cheese, softened

We dumped everything in the crock pot except for the cream cheese & HWC on low for 6 hours.
Removed chicken to shred.
Added the cream cheese, HWC, & shredded chicken back in the crock pot for another 30 mins. before eating!

Ryan's Pizza Crust plus other Recipe links

Cheesy Crust Pizza

INGREDIENTS

2 oz cream cheese or Boursin cheese (2 fat)

1 extra large egg (1/2 protein)

2 oz Parmesan cheese (1 fat+1/2 protein)

3 oz Mozzerella cheese (1 1/2 protein)

1 tsp Italian seasoning 

1 oz Mozzerella cheese (1/2 protein)

2 oz marinara sauce 

9 oz vegetables (I used onion, mushrooms, spinach, tomatoes, banana peppers)

Olive oil cooking spray

Italian seasoning

Garlic salt

DIRECTIONS 

1.  In a bowl combine cream cheese, egg, 2 oz Parmesan, 

3 oz mozzarella, and Italian seasoning.  Mix well.  

2.  Place parchment paper on a baking sheet.  Preheat oven to 375 degrees.  Spread crust mixture out on parchment paper.  

Press as thin as possible, using a spatula to straighten edges and press down.  

3.  Bake for 15 minutes.  Let cool completely.  NOTE:  Crust can be made ahead of time and stored in the fridge or freezer.  

4.  Preheat oven to 400 degrees.  

5.  Top crust with marinara, 1 oz mozzarella and vegetables.  Spray with olive oil cooking and sprinkle with garlic salt and Italian seasoning.  

6.  Bake for 12-15 minutes until bubbly and crust is crisp.  

7.  Makes 3 servings:  1 protein, 1 fat, 3 oz vegetables

Ed Week Notes on Getting Stuff Done

 The main points that I want to remember from the lecture series Getting Stuff Done: A Mindful Approach to Personal Productivity in the Digital Age by Matthew B. Morgan


7-T Getting Stuff Done: Distinguishing the Vital Few from the Trivial Many


Bruce Lee: Use only that which works and take it from any place you can find it.

Thoreau: It is not enough to be busy; so are the ants. The question is: What are we busy about?

If I keep my current daily practices, where will I be in 10 years?

Not motivated? That means one of two things:
-You are not in enough pain to be motivated
-You are not curious enough about the power of possibility

We are like an elephant and its rider. The elephant is the emotional component and the rider is the analytical part. It's tough to deal with the elephant because it goes wherever it wants. You have to motivate the elephant. The "why" is the key point to motivation. Start with the "why."

conversion--> principles --> practices
vision-------->strategy ----->tactics

The 3 economies:
1-health (you can't outrun a bad diet)
2-wealth
3-time (a zero-sum game--a pie, it is finite and there is no more)

80/20 Principle--80% of the results come from 20% of the effort
vital few vs the trivial many

President Dallin H. Oaks: “I believe many of us are overnourished on entertainment junk food and undernourished on the bread of life.”

Warren Buffet supposedly said to write down the top 25 things that you think you need to get ahead. Then circle the top 5. Ignore the other 20 and work on the top 5 until you have them done.

Determining Priorities
-What are my vital few?
-What precepts should I abide by?
-What might I regret when my time on earth is over?
-What do I care most about?
-What was I born to do? (look at your Patriarchal Blessing)
-What am I willing to let go of?

I can do anything, but not everything.

Create a personal mission statement.

Avoid perfectionism and comparisons.



14-W Getting Stuff Done: You Need a System, but Keep It Simple


Viktor E. Frankl: He who has a why to live for can bear almost any how.

If you want success, figure out the price and pay it.

Multitasking doesn't work--it is continuous partial attention and leaves you feeling overwhelmed and over stimulated.

Habit -----> routines------> rituals
Create a planning ritual, something that's a constant for you

A weekly review--it takes some prep, so schedule it. Find a place you won't be disturbed and bring your tools.

1--Prepare your mind with opening exercises
    mindfulness  3-5 minutes of relaxed breathing
    use inspirational music
    prayer--ask what needs are before me and what would He have me do
    connect to your mission (a vision board)

2--Evaluate last week
    what went well and what didn't go well
    what could I do better on

3--Review your roles (wife/mother, daughter/sister, ministering sister, RS president)
    ask questions about the roles and schedule the answers

4--Preview upcoming week
    --empty your head
    --review the calendar
    --review/process lists:

Guard the morning for work that needs focused concentration.

Using Stephen R. Covey's 7 Habits of Highly Effective People quadrants:

Schedule your Quadrant II items (important but not urgent) and make these standing appointments:
    planning
    exercise    
    personal finance
    learning, study, writing
    relationships

Review your lists--eliminate and prioritize items
Review your NOT to do list (distractions, drain your energy, stresses you, feel obligated to do, actually doesn't need to be done).

NOT list (take these things off your plate: 
        check your phone or email first thing
        answer unrecognized phone numbers
        sacrifice exercise time
        multitask
        time on social media
        over volunteering
        micromanaging
        use phone at home

Quadrant IV--a lot of waste
Quadrant I and II are important
Quadrants I and III are urgent--management
Quadrant II is leadership
        
Does this bring me closer to the life I want?
Must I do it? (If not, delegate it)
Can I do it more efficiently or less often? (optimize it)
What if I don't do it? (could I delete it?)

Q I-- do  urgent and important
Q II-- decide   schedule it
Q III-- delegate
Q IV-- delete

I and II are the vital few
III and IV are the trivial many

Look at the to do list this way:

could do

should do
could do
should do

move the "should dos" to the success list and do those

Don't have too many to dos. Be overly strict about the process

Do's:
show up
celebrate progress
track progress with a "to do" list

Amabile and Kramer (The Power of Small Wins): Of all the things that can boost emotions, motivation, and perceptions during a workday, the single most important is making progress in meaningful work.
